Fruity smoothie and healthy raspberry muffins for #FRD2014

#FRD2014 raspberry muffins

That is right, a one bite treat that is actually healthy!  Very little sugar so your kids will not be over-exited with a sugar-rush.  Ah!  Those are awful.  For their little body and teeth.  And us.

As I was able to participate to the Food Revolution Day any other way than virtually, I decided to prepare healthy things the evening before and delivered them on the D-Day.

My son assisted me with a smoothie that him and his sister brought to the daycare to share with their friends at snack time.

Raspberry smoothie

For my husband work and mine, I made muffins bites.  They had a great taste, fresh and moist on the day of baking.  The whipped cream created a great balance with the tartness of the raspberries.

The smoothie was naturally sweet with the bananas.  The kids loved it.

Fruity smoothie and healthy raspberry muffins

Yield: 50 muffins bites and 3 litres of smoothies

Ingredients

  • For the muffins:
  • - 2 cups of flour
  • - 1 tablespoon of baking powder
  • - 1/2 a cup of brown sugar
  • - 1 pinch of salt
  • - 1/4 a cup of melted butter
  • - 2 eggs
  • - 1 and 1/2 a cup of milk
  • - 1 and 1/2 a cup of raspberries
  • For the wheap cream:
  • - 125ml of whipping cream
  • - 1/4 a cup of icing sugar
  • For the smoothie:
  • - 500g of raspberries
  • - 6 bananas, peeled
  • - 750ml to a 1L of water

Instructions

  1. For the muffins:
  2. - In a bowl, put the dry ingredients: flour, baking powder, brown sugar and salt. Mix well.
  3. - In another bowl, beat the eggs, pour the butter and the milk, mix well.
  4. - Add this mix to the dry ingredients and mix until smooth, then add the raspberries.
  5. - Pre-heat the oven to 380F, fill the your mini muffins dish with the preparation.
  6. - Bake for 12 minutes in the oven, repeat until you have use up all your preparation mixture.
  7. - Allow to cool down.
  8. - In the meantime, whisk the whipped cream with a hand mixer, along with the icing sugar.
  9. - When your whipped cream is ready (should be firm), put it in a pipiing bag and put a little tip on each muffns.
  10. For the smoothie:
  11. - In a blender, put the raspberries and half of the water, mix. Pour in a big bowl.
  12. - In the blender, put the bananas and the rest of the water, mix. Pour in the bowl with the raspberries.
  13. - With a wooden spoon, stir well. Depending on how you like it, you can add some water.
