Hellooo!  Today, I’m talking about a recipe inspired by my French culture and it’s awesome!  What’s so great about that recipe?  So many things!
– Kids and adults love it.
– Meat lovers and vegetarian eat it.
– You get to eat your green.
– It’s perfect for dinner and makes a great lunch for school or work.

 Saying it’s inspired by my French culture is not totally right nor fair… to my son!  My little superhero loves to watch Popeye and  asks me regularly to buy spinach at the grocery store. I know, I am a super lucky mom as not all the kids asks for spinach, broccoli and green beans at the store.

Roasted veggies salad with pesto vinaigrette

Although summer is acting up a little this year, it’s still summer so we should enjoy it.  Everywhere but specially in your plate!  Think marinated veggies then roasted, think bright green salad, some barley al dente and the flavor of basil in the vinaigrette.  It’s a whole season in a bite.

The marinade definitely gives an acidic taste to the veggie that will be soon balanced with the pesto flavor.  The tender veggies and the barley are the perfect match to the baby romaine.  You would love a bowl of this tossed fresh salad.

Spinach and quinoa stuffed portobello mushrooms

And we are talking quinoa and spinach in a creamy sauce!

Loaded with protein, a great vegetarian meal, yes meal because the mushrooms were that big.  If you are sharing one, it can be an appetizer.   It is topped with goat cheese and it is giving such a kick to the dish.

You will love the freshness and strength of the goat cheese is really the perfect addition and balance to the mushroom and its stuffing.

7 simple steps to a Caprese pizza

7 steps!  It is that simple to get a soft dough, bubbly boccocini cheese and the flavorful pesto!  Oh and did I mention that bubbly cheese?  All melting and it will make a string of cheese from the pizza to your mouth!

Gosh, I got myself convinced!  I will do some more tomorrow!  Too good to be ignored!

Also, I made mini pizza because it is easier for the kids, each their own.  But you can make 2 big ones with that recipe.  Or still make small ones as an appetizer.  Yes, I will do that tomorrow.
