Little vanilla shortbread balls

On Friday, I saw on the internet a funny card saying “Wohoo it’s Friday! Oh wait… I’m a mother”.  I really made smile and realise how true it is.  As much as I love my kids and spending time with them, weekends are definitely not the same restful weekends we used to have before parenthood.  With 2 kids of 1 and 3, weekends are made of endless laundry, folding clothing, cleaning, groceries…  And each monday, with a teacher from the day care, we joke how my weekend is actually starting the monday morning in my office with my coffee!

But you know what?  I would not trade my life for anything,  This is all worth it and as for the tiredness, add a little sweetness with those vanilla shortbread balls!

So buttery and nutty in your mouth, you can NOT eat just one!

Meatless meal recipe from the South…

In North America, it is very common to have gone in the South on vacations, meaning in the Caribean.  One of the comment I get is that the food was not that great.  Well, in the all-inclusive resorts, I don’t think that you will experience the local food.  Not only they have yummy dishes to discover but beautiful places.  Even though, we have not know each other for a long time, you might know that I am talking about Cuba…  Here is some warmth for you…

Today, I want to share a meatless recipe for an easy weekday dinner.  I simply love that recipe. It is easy and full of flavors.  All the ingredients you will need are probably already in your pantry.

In spanish, it is called garbanzos, but this is actually chick peas. It is a recipe I discover from my husband, el Cubano and his family.

Oh baby, I want a salted caramel mousse!

I have been craving for salted caramel. A salted caramel mousse. For some reasons, I have been really salivating for that one on a graham crust. No, don’t ask! The family is not growing. Just wanted to satisfy my sweet tooth.

You know what? I did not actually satisfy just mine. I apologize for the poor pictures, but I probably got 30 seconds to take pictures before it got eaten. I guess it is a good sign.

Discover my kitchen philosophy and my Arancinis!

I am no chef.  Just a mom that loves to cook for her family.  And if there is one thing i do not believe in is that there is an ‘official’ version of a recipe.  Each person can do according to their own taste, means, allergies and imagination.  Oh and according to your time too, important factor in my house.

I would like to share a recipe that is definitely not how Italians would do it and they would ‘boo’ me.  I am okay with that and you know why? Because my kids and whomever tried it, loved it!

I love the recipe because it is a different alternative to the usual pastas, rice and potatoes.  Kids, toddlers and even husbands need to be seduced at the table.  You can even prepare it with the kids, they’ll love it.

What are those?  There are little breaded balls of rice stuffed with cheese.  Well, normally, in Italy, they use the risotto leftovers.  Oh well…
