Chicken quesadilla

The ultimate juicy and cheesy quesadillas.  I mean, you bite in it and the extra juice and the string of cheese.  That’s it your hand are all messy but isn’t it even tastier?

This is just the recipe you need to get ride of your chicken left over, being a rosted chicken, barbecue chicken breasts, it will do the trick!

I did not have avocados or guacamole, it would have been a great addition.  But let me tell you that even like this, alone, you don’t need to get convince to devour it!

7 simple steps to a Caprese pizza

7 steps!  It is that simple to get a soft dough, bubbly boccocini cheese and the flavorful pesto!  Oh and did I mention that bubbly cheese?  All melting and it will make a string of cheese from the pizza to your mouth!

Gosh, I got myself convinced!  I will do some more tomorrow!  Too good to be ignored!

Also, I made mini pizza because it is easier for the kids, each their own.  But you can make 2 big ones with that recipe.  Or still make small ones as an appetizer.  Yes, I will do that tomorrow.

Zucchini-pesto fritters

Here a great recipe to add to your little one lunch bag, picnic menu or weekday menu!  I love simple yet tasty recipes and those fritters are meeting my requirements.  The pesto really adds a great flavor, it tastes like summer!

Sometimes, it is just what we need, a simple idea.   Don’t you stare at your fridge sometime wondering what you will make for dinner?   Darn, there is nothing you say!  While the fridge is actually all stocked up.

When the inspiration is not there, I always make sure that there are some greens on the table!  Dang, here a green something in your plate!  My son loved it, it said it was like a cookie.

Colorful healthy skinny snack: Creamy avocado dip #FRD2014

It is almost there!  Friday will be Food Revolution Day, what have you planned to participate?  It does not have to be anything big, just a healthy influence: take a picture, share it on social media and add #FRD2014.  Done.

In my Food Revolution Series, I have been taking part of the campaign by through different initiatives:
Understand where food comes from: We made a small area in the backyard dedicated to a garden, the kids planted vegetables seeds and have been watering it every single day since.
Involve your children in the kitchen; My son made dinner with me, he was really proud of his meat balls, you have to try those with your children!
Cook from scratch as much as you can like this pecan-crustedchicken.

Small bites for mini fingers with some baby corn bread

My little baby will be entering Junior kindergarten next September…  I know it is part of life, baby grows.  As a Maman, it just seems so fast, so unreal.  It feels like yesterday I was holding him for the first time!  I am getting emotional here!

What I really wanted to share with you is that I am starting to gather ideas and recipes that will fit his lunch bag and keeping in mind that it needs to be peanut-free.

I made this corn bread and cooked it in mini muffin pans. It makes perfect little bites for the kids and even for the parents to go with a soup, like the creamy butternut squash soup or a summer salad.

I had to work on my recipe as I found it to dry and too blend. This one is perfectly moist and I used big grains of salt which adds some crunchy. I love it!
