Healthy vegan chocolate tartelettes

Do you have a sweet tooth and need your sugar fix after lunch? I got you covered! I have some sweetness and chocolate for you. Also, if you are vegetarian, vegan, it’s a keeper. Otherwise, it’s a keeper anyway! I know, I rock.
I’m talking tartelettes tasting like heaven and not staying on your hips!



It’s small, grab one!

In fact, this tartelettes will satisfy your craving and not give you bad conscience. Come on, admit it, don’t you feel bad after eating a bad chocolate bar just because? You can tell me, it’s me! Because, I do. After lunch, I generally look for that little something sweet that will mark the end of the meal. A nice expresso don’t always work, sometimes it calls for nice piece of chocolate to go with it.

Since we only live once and I own my curves, I indulge! However, I will try to make smart choices and Ta-da, now you have my healthy vegan chocolate tartelettes.

I used the lids of my mason jars as mold and it makes the perfect size for a treat! I got this idea from Dessert for 2, Christina is always so creative.

There is no sugar added and yet it is sweet. The figs and raisins are doing all the job. The combination of the nutty taste of the walnut and the chocolate will make ask for more!

Hidden fruit alert!

Now, there is a mashed banana in the chocolate. I love it! You can taste a little hint of its flavor. I got guinea pigs that did the test tasting of the tartelettes and one of them would have rather not feel the banana taste. So if you want when you melt the chocolate, instead of the banana, you can pour a dollop of milk to help it melt (2 or 3 tablespoons, not more) but then it’s not vegan anymore. But it’s an alternative.

Don’t trow out to the garbage this ugly-looking banana! Make me some tartelettes and a nice smoothie to go with it. Why not?

Bonus: Kids liked it too!

Healthy vegan chocolate tartelettes

Total Time: 30 minutes

Yield: 12 tartelettes

Serving Size: Mason jar lids

Ingredients

  • - 3/4 cup of dried figs
  • - 3/4 cup of walnuts
  • - 1/2 of raisins
  • - 1 very ripe banana
  • - 1/2 cup of chocolate chips

Instructions

  1. - Preheat the oven at 350F
  2. - In a food processor, put the figs, walnuts and raisins and pulse until there are no walnut chunks anymore and all the ingredients are starting to stick together.
  3. - Prepare your lids, place some aluminium foil at the bottom, to prevent from sticking.
  4. - Spread the ingredients previously mixed in the lids, pressing with your fingers to make your 'crust' evenly spread.
  5. - Place in the oven and bake for 7 min.
  6. - In the meantime, mash the banana. To avoid in lump, put it through a small strainer.
  7. - In a pan, melt the chocolate with your banana puree.
  8. - Once your lids are out of the oven, pour your melted preparation in the mini tartelettes until filled.
  9. - Allow to cool down and place in the fridge for 2 hours.

Notes

Keep refrigerated in a air-tight container up to a week.

Cranberry Walnut kale salad with goat cheese dressing

Hello nice weather and positive temperatures!  Everybody seems so merry and smiley lately and it might be thanks to Mother Nature.  It’s not summer yet but after so many -25C or -30C in Toronto, let me tell you that +2 is worth jumping all over!

Gorgeous blue sky, snow melting, does it put you in a spring/summer mood?  Of course it does!  I love it and now I can say Bye to soups and Hello colorful salads!

Cranberries-Walnuts kale salad with goat cheese dressing

 Last year, I tried kale and I really fell for it!  Since it’s a chewy salad, I chop it off really small.  I use to pound it with the meat tenderizer but I skip that task and it’s just fine.  I add some nuts for crunchy-crunchy, some cranberries for some sweet taste.

Aaaaand… Wait for it (**drum roll**), I make that super simple, quick and easy goat cheese dressing.  Kale dressed in white and creamy love.  I mean, you have to try it to believe it! So simple and yet so crazy amazingly good!

True story: (Don’t tell El Cubano I told you) He likes his green salad dry, so without dressing.  Not his thing.   Well, as he wishes.  The other day, he said he was ready to try some kale (you know he’s not big on veggies and all… we talked about that). And TA-DA!  He loves this recipe with the dressing!  It’s that good.

My little super-hero who is 4 loved it too!  He wanted some for his lunch but I didn’t have any left over without the nuts but good to know!  Isn’t he amazing eating kale and spinach?  That’s my boy!

On another note…

Lately, I have been having a hard time balancing life and blogging, as you can see.  It’s not always easy and blogging is a lot of work.  I needed to relax and not think about it for some time.  So little by little, I’ll be back.  Also, the sun is here more often.  I just don’t know how to take pictures without natural light.  I tried and I have horrible pictures….

Kale salad goat cheese dressing

 

Cranberries kale salad with goat cheese dressing

Prep Time: 10 minutes

Yield: 4 servings

Keeps well in the fridge for 2 days, even after adding the dressing.

Ingredients

  • - 2 cups -packed- of chopped kale
  • - 1/2 cup of dry cranberries
  • - 1/2 cup of chopped walnuts
  • Dressing:
  • - 3 tablespoons of olive oil
  • - 2 tablespoons of goat chees
  • - Salt to taste
  • - Pepper to taste

Instructions

  1. - Rince your kale. Dry. On a chopping board, chop the kale. Set aside in a bowl.
  2. - Add the dry cranberries and walnuts.
  3. - For the dressing, pour the olive oil in a ramekins, add the goat cheese and stir until smooth.
  4. - Add salt and pepper to taste
  5. - Pour on your salad and toss.

Healthy energy bites, the perfect snack

It is raw, it is vegan, it is peanut-free, it is gluten-free, it is dairy free, it is for YOU!

As I was telling you, we indulged a lot during our vacations.  When you come back from a holiday break, your body is totally off and so is your appetite.  At least for me.  I am hungry earlier and my stomach is calling for more food!

Aaaand here comes my little healthy bites.  Look at those guys.  It has raisins, sunflowers seeds, spiced up with cinnamon and the crunch of popped quinoa!

Don’t you want to steal one?  Or 2?  I am telling you, there are addictive!

I just told you about popped quinoa, it is such a perfect find!  I make a little jar to always have some, I added some in my yogurt, salads and now those bites.  You HAVE to try it!

Green smoothie Vs Winter and stomach flu!

And it is a tight!  Mhh actually maybe Winter and stomach flu probably won… I am just back on my feet after 4 days totally knocked off by a stomach flu. El Cubano too.  It was worst even. Picture this: the parents feeling sick on the sofa and a 18 months and a 3-year-old putting the living room upside down!  Thankfully, I have wonderful in-laws that saved our lives!
